Bayunka
History
For the very first time, we have partnered up with Finca Nuevo Mexico and are super proud to roast and release their coffee Bayunka. For this particular release, we're going to let the producer, Carlos Ibarra, speak directly about his coffee and farming practices:
‘Our family farm, founded over 35 years ago by our father, Ricardo Ibarra, is not only dedicated to producing exceptional coffee but also to preserving and respecting the environment. From the very beginning, we have maintained a natural reserve on the farm that remains untouched to this day. While the farm spans a larger area, we only actively work on 180 hectares, ensuring that the natural ecosystem continues to thrive.
The farm is powered by renewable energy through a small hydroelectric system we built on-site. This sustainable approach aligns with the values our father instilled in us—efficiency and a commitment to minimizing waste. For example, we reuse parchment husks to fuel our drying ovens and turn coffee pulp into nutrient-rich compost, creating a circular system where nothing is wasted.
These practices, passed down from our father, have become the foundation of our work today. My brother Ricardo Jr. and I are proud to carry on his vision, not just in coffee production, but in ensuring that our processes remain sustainable and respectful to the land. We believe this holistic approach is essential as we continue to produce and share our coffees with the world.
At our family farm, my brother Ricardo Jr. and I are continuing a legacy started over 35 years ago by our father, Ricardo Ibarra, a visionary agricultural engineer. He built the wet mill and developed the farm with a relentless focus on efficiency. Over the years, he made numerous changes to the wet mill, always seeking to improve processes and optimize operations.
Five months ago, we lost our father, Ricardo Ibarra, and now my brother and I are committed to honoring his legacy. Together, we are continuing this journey, refining our processes, and exploring new markets for green and roasted coffee, which we know are valued around the world.”
It’s this efficiency, attention to detail, and constant drive for innovation that results in the production of Bayunka as such a wonderful coffee. A classic round and sweet coffee, Bayunka is easy drinking, well structured and very approachable. We experience notes of baked apple, walnut, and cocoa nibs.
