History

Found in the Usulután department of El Salvador, Los Pirineos farm is operated by fifth-generation coffee producer Diego Baraona. Diego took the helm at the farm in 2020 following his father’s passing and now works to carry on the tradition and legacy of not only his father Gilberto, but the more than 130 years of experience, history, and knowledge that his family has in coffee cultivation.

It’s fourth year we are buying coffee from Diego Baraona and his farm is known as one of pioneers for experimenting with processing and cultivating very rare varietals of coffee. If you’ve been following Prolog for any amount of time, you should know very well that we are big fans of everything they produce.

This particular coffee is a bean of Ethiopie Harrar varietal. A varietal that is sought after for its distinct and complex flavour profile, through its name you can probably tell that it originates and is typically grown in the Harrar region of Ethiopia. By cultivating this coffee in El Salvador, Diego and his team have managed to bring some of the best aspects of Ethiopian and El Salvadorian coffee together, with complexity and acidity together with body and structure. In the cup, we experience flavours of blackberry, lemon, and fresh herbs.

This lot of Ethiope Harrar coffee underwent Anaerobic Washed processing. After harvest, ripe cherries are placed into sealed barrels where they are fermented for 72 hours. The fermented coffee is then pulped with water before being spread onto shaded, raised drying beds. The washed coffee was dried for 45 days to reach its ideal humidity.
